RAMP PESTO

1 ¼ cups frozen ramps leaves

2 tablespoons pine nuts

7-10 tablespoons organic olive oil

1 ¼ cups finely grated organic hard aged cheese(try fruitful seasons dairy for the BEST cheese ever)

salt to taste
Combine ramp and pine nuts in food procesor. Add oil slowly while pulsing.
Add cheese and stir by hand. Salt to taste.

RAMP Omelet
Make your egg omelet just like you usually do, but add a handful of frozen ramp leaves to your egg and milk mixture for a nutritious and delicious meal.
